My good friend Luis Mayorga, is the owner of El Boquinete restaurant, a charming respite in Tonala, Mexico, located in the passageway between Juarez and Zaragoza.  In this photo Luis and one of the cooks at the restaurant are teaching me how to properly char peppers.  The peppers then serve as a base for all sorts of wonderful Mexican dishes, from making pepper flakes to salsa.  I recommend making the trip to Tonala (a brief ways from Guadalajara), if for no other reason than to eat at El Boquinete.  Ask for Oscar or Luis — and tell them Anita sent you!
